A rainy afternoon calls for baking and so on the wet west coast that means I bake a lot. The WF and recently SF element of my life makes that just a little more challenging. I adapted the following recipe from one that I found on thesproutedlife.com based on what I had in the cupboard.
1/2 cup coconut flour
2 tbs of white ground chia
1/2 tsp cinnamon
1/2 tsp baking soda
pinch of sea salt
3tbs of melted butter
2tbs of honey
2 eggs
Heat oven to 350F
Mix the dry ingredients and wet ingredients separately then add the wet to the dry. Using a 1/3 cup – spoon on to tray covered in parchment paper. Cook 15-18 min until golden brown. Easy pease recipe that received 2 thumbs up from the 7YO food critics Ainslie & Miranda. Served with a little butter for the SF people and with butter and Strawberry Jam for those who indulge. They didn’t last long enough to get cold but I suspect they are better warm.
